The rare Pink Bourbon is possibly the most miraculous (and, notoriously challenging) plant to cultivate. A hybrid of the Red Bourbon & Yellow Bourbon, to achieve the pink color this Bourbon varietal is named for, coffee pickers must meticulously sort through coffee cherries for even the slightest color nuances, separating the underripe cherries from mature ones and isolating their crops in order to ensure successful cross-pollination.
